It was my first time having it and I'm not gonna lie, it looks a little weird. :) I have major issues with textures but forced myself to give it a try. Wow! It was so yummy! Any thoughts? I completely agree that all of us should be having more fruits and vegetables. For me, the dairy is a concern because so many out there nowadays are having allergic reactions to it. Not to mention the fact that we can get all the protein we need from grains, vegetables, nuts, and seeds. I think it's easier to understand for children and easier for us to remember. Fill the plate halfway with fruits and vegetables and I bet most of us will be doing more good than we have been doing.<br />

Today was pretty uneventful and good at the same time. I love it when nothing major goes wrong. For lunch today I had the most delicious salad! It was romaine hearts, corn, black beans, peas, hemp seeds, chia seeds, and for the dressing I mixed a little Bragg's ACV with a little oil and some fiesta seasoning. YUM! The best. Oh, I did add some sesame sticks at the end for a little extra crunch.<br />

I have mixed feelings about this. I'm SO, SO proud of him. He's so smart and is such a good boy in class. His teacher said she really loved having him in class. He was always helping others and setting a good example. Peyton received the "Student of the Month" award AND the "Principles Pride" award this year. I couldn't be more proud and happy for him. On another note, I made some AMAZING crackers yesterday! I pulled them out of the dehydrator today and it's safe to say they were a major success. They're my version of Cheez-Its. YUM. Here's the recipe if you're interested in trying them out yourself.<br />

1/2 cup soaked cashews<br />
1/2 cup soaked sunflower seeds<br />
1 red bell pepper<br />

Blend all ingredients in food processor until pretty smooth. Spread out on one teflex dehydrator sheet. Set on 115 degrees for 4-6 hours. Score with pizza cutter. Flip onto another sheet. Dehydrate until dry. I let mine go overnight. So good!! I quadrupled the recipe and I'm so glad I did. I want to try making them with other types of nuts/seeds next time. I used the flax because I tried making a cracker similar to this last time and they broke apart. The flax is to hold them all together.<br />

After packing those up I made myself another green smoothie for lunch. This one had celery, carrots, spinach, banana, mango, maca, flax, and spirulina in it. Super creamy. Mango always makes everything creamy.<br />

Puree one apple, dates along with 1/4 cup soak water, syrup, orange, orange zest, cinnamon, salt, and 1/4 cup of the soaked walnuts in high speed blender or food processor until smooth. Transfer to a large bowl. Add remaining ingredients and coat thoroughly. Add grawnola to 5 teflex sheets and place in dehydrator on 105* for 10-12 hours or until fully dry. Place in an airtight container and enjoy!<br />

You can also add other dried fruits or nuts. Almonds would be delish in this but I didn't have any on hand. You can also try dried blueberries or cherries. For a tart grawnola substitute the orange for lemon! The possibilities are endless. Make it your own and have fun. You can not mess this up! Add what you like and leave out what you don't.<br />

Turns out, I really only took pictures of our hike. :) That's okay because that was my favorite part of the trip! The weather was slightly cool (so we didn't get sweaty) and the sun was out. My dad, mom, oldest son Carter, and myself went. I think it took us at least 2 and a half hours but it was amazing. Carter didn't complain once! I don't know how he did it. When I was his age all I did was complain. He loves hiking and so do I. It's something that we can do together and I love that! I know this post is picture heavy. I hope you forgive me. How are y'all today? So just a little update of how things are going with the initiative. I've been doing pretty well as far as eating more fruits and veggies go. I'm still eating some cooked foods but it's getting less and less every day. I'm still at the exact same weight that I was when I first started this whole thing. Good news? I'm getting so many more live enzymes and nutrients than I was before. I'm feeling better, I'm more alert, happy, more patient, and healthy!<br />

I made a couple creations yesterday and they are both delicious!! First, I made some zucchini chips! YUM! I only had one zucchini but I thought I would give it a try. Yum! Only thing is that they shrink up so tiny that I have just a couple handfuls. They're going to be gone so fast! I need to make about 6 zucchinis at a time. Then they'll last at least a day or two. ;)<br />

I had all the fixins for this Soul Food Soup recipe and I didn't want everything to go bad so I made it today. I'm having my green smoothies today but guess what I did with it? No bueno. But I'm not beating myself up over it. I felt heavy and slow the last couple of days and I KNOW WHY! Isn't that amazing? Now I know why I feel a certain way. Our bodies really do talk to us! Other than that I've been doing well, lemon water in the morning, green smoothies, salads, green tea, and now the occasional raw cracker! It tasted delicious already! I just added a bit of lemon juice, tiny bit of salt and oil. Massaged away and that was it. I put it in a mason jar so it's ready to go tomorrow. I also made some Cheez-its today and they're in the dehydrator. I'm loving the motivation I've had to try new things. This morning I had never had a green, yellow, or red bell pepper. Today, I tried it while making my cheez-its! This is huge for me. Hopefully I'll pick it up the rest of the week. We're going camping again this weekend so I'm trying to make a bunch of snacks ready to go for when I'm by the campfire.
